Custom variables allow you to segment your users and they can provide very useful context. Examples include finding out what percentage of users prefer a paid app vs. an ad-supported free app. In this scenario, you can find out which of the apps you're making more money on -- the free one or the paid one. You can also find out how many installs your app got by version, which version is the most popular, which is the least popular, and how fast your users are upgrading. You can also easily learn whether the users of your app prefer to use it in portrait or landscape mode.
These are just some examples, of course, as custom variables can lead you to many more useful answers about your app's users and their usage patterns.
